I am not a HUGE Starbucks fan I will be honest. Just do not get the hype and well, honestly, sometimes their coffee drinks are way too sweet!

Sis is the same, although she is just not a fan of the coffee, period. Bring on the PEETS is our motto around here! Psst … we buy it at Costco in that huge 2 pound bag for about $15 a bag.
We were on some random trip somewhere (Nashville most likely!) and starving at the airport so we popped in to the Starbucks and grabbed some of those egg bites.
Uhm, damn, those things were expensive as heck!
But good! And I knew (as always) that I had to figure out a way to make them and sometime soon.

Costco had these cool silicone muffin pans (2 pack for $14.99) and I told Sis, we need to make those egg bites! ASAP! Bad news was that Costco did not have eggs outside the 5 dozen option and even though I knew that we would use them up eventually, they would be taking too much real estate space in the fridge since WINTER is still here and the patio fridge is not a reliable chiller at the moment. Hence, Instacart order was made after a trip to Costco.
Anyone else do that??
Well, this is the time, at last! Probably six months after the fact but hey, better late than never!

So … you can use whatever you want outside the eggs, cottage cheese and salt and pepper. I mean, you want a different cheese? Go for it but keep in mind that you want a “drier” cheese so skip the cheddar for this. Want a different mix in? Try a veggie of some kind (I’m thinking a little diced pepper and mushroom next time around).
Ok, ok, let’s get cooking!
6 large eggs
4 slices of bacon, cooked and chopped (alternatively, nuke some bacon bits in the microwave
AND/OR
½ cup cooked sausage crumbles (used the Jimmy Dean’s stuff)
1 cup cottage cheese
1 cup gruyere cheese, shredded
¼ tsp salt
¼ tsp pepper
Preheat the oven to 350.

Grab your cupcake pan (I used that new fancy silicone one from Costco) and spray with non-stick spray. I use avocado oil and spray 95% of my cooking time so I grabbed the can of Chosen from the cabinet.

Dig out the big ass blender that you stash because, again, it takes up very valuable real estate on the kitchen countertop! I have a Vitamix that is going on 10 years old. Trust me, I would not spend that money (at the time it was about $700) on a blender BUT the bosses of the law firm picked it up for me for Christmas because ALL I talked about for a bit there was those yummy Fresh Fruit Margaritas. Those WILL be making an appearance this summer, trust me!
*Sorry, got a little distracted*
Combine the eggs, cottage cheese, gruyere cheese, salt and pepper in blender and let blend til well combined.
Evenly pour this mixture in to the cups of pan. I only got 11 this time around.

Top each tin with bacon and/or sausage (or heck, be healthy and top with a veggie if you want!). I did half bacon and half sausage (6 and 5).

If the meat does not sink in, just tap down with the back of a spoon so it’s not sitting on top of the egg.
Bake for 20 to 25 minutes til eggs are set and cooked.
Remove from oven and let rest 5 to 10 minutes and THEN gently remove them from the pan with a spoon or offset spatula!

*So, I got busy and was jammin to some music and did not hear the timer go off at 20 minutes so these cooked for 30 minutes … still good but I would strongly suggest you pay attention and take them out at 25 minutes, max!
