I used to make this ALL the time when the kids where little … now that they are 30 and 33 so it’s not happening all that often!
We decided to make nachos one night and I realized that we did NOT have any salsa … so off I went to my bulging folder of tried and true recipes and found this.

This is crazy good and so simple to make.

Grab your gloves, blender or food processor and let’s get ready to whip up some salsa!

Wait. What? You aren’t using gloves yet when you prep food? Keep those nails pretty and hands odor free (onions and garlic coming in!) with these!

2 cans of diced tomatoes. I always use fire roasted when I can find those!
1/2 onion chopped (don’t worry too much, it’s going in the food processor/blender)
handful of fresh cilantro leaves, again, chopped
2 cloves of garlic … chopped
1 teaspoon salt
Juice of one lime
Optional: Jalapeno, seeds and membranes removed (I generally leave this out as I don’t want the salsa super spicy)
Optional: sugar to taste. Some folks like there salsa a little ‘sweet’ so if that’s YOU, add up to a teaspoon of sugar at the end.
Add all ingredients to the blender / food processor (do not drain the tomatoes!) and pulse until you have the consistency you like for salsa.

Taste and if necessary, add a little more salt, lime juice or sugar, a little at a time until it’s just right.

Transfer the salsa to a large jar or glass container and refrigerate. Ideally, this should sit all day if you’ve planned your time correctly! It’s good now, but BETTER later, just saying!
This jar of magic will stay in the fridge up to 2 weeks IF you keep it out of site, otherwise, it will be gone rather quickly as it’s so tasty!
