Breakfast Tacos at Home

We used to love to go for breakfast on the weekends … and then we discovered that WE CAN make just as awesome of a breakfast at home with just a little effort!

A few street size tortilla shells, some eggs scrambled, bacon or sausage, a little cojita cheese and you are pretty much on your way to morning happiness!

So this idea comes from my son, Jamie. Whenever I visit him in Lauderdale, we always do Sunday morning brunch at this little (not really little) Mexican place close to his home for the bottomless mimosas and the outdoor patio seating … cuz, let’s face it, NW Indiana is not embracing outdoor dining at the moment!

Ok, let’s get to this!

I based this on two tacos per person cuz we may eat like birds around here!

3 eggs, mixed well with a splash of water
Sausage crumbles (cooked – I use the Jimmy Dean stuff)
Cotija cheese, shredded (I use a zester to do this right over the taco)
Avocado slices (optional)
Salsa (optional but recommended)
Fresh chopped cilantro (optional, but HIGHLY recommended)

We didn’t’ have any pre-made salsa in the house so didn’t have any for this round. BUT it was still good!

In a medium size skillet, cook your eggs (make sure you are moving them constantly for soft, fluffy scrambled egg texture) and cook the sausage up in another small skillet (reheat if you are using pre-cooked stuff).

Heat those shells up in the microwave for about 20 seconds between 2 pieces of damp paper towel.

Grab your taco holder (seriously, go get some!) and line up your shells in the holder. Add eggs, sausage, tuck in the avocado slices, grate the cheese over the top and top with salsa (if using).

Lastly, sprinkle some of that delicious cilantro over the top. I get it, some of you out there do NOT like the stuff, and that’s fine, it is OPTIONAL but I love the stuff so on it goes. Sis does NOT get any on hers!
