Crispy Lemon Chicken Wings

For years, and I MEAN YEARS, I wouldn’t go anywhere near chicken wings!

Chicken Bones!

Chicken Skin!

And then …. I tried some delicious deep fried (in that turkey fryer contraption) that Mark and John made one weekend and fell in love with wings …

Mind you, I’m VERY picky when I order them: well done, small size, naked, etc.

Then I started to make my own.

See, Costco has these 3 packs of Party Wings. You know, separated wings and flats cuz no one wants to voluntarily deal with that. I mean, I WILL, if I have no other options, but hey, if my BF grocery store can help me out, I’m in! AND they are at $2.99 a pound (last time I purchased a bunch for the deep freezer) so that’s almost a bargain!

Oh, and one last tip? Gloves. Using rubber gloves (powder free) will really make your cooking a lot better, trust me! I have these on subscription order status every 6 weeks now!

All right, all right, let’s get cooking!

2 pounds of chicken wings
2 tsp cornstarch
1/2 tsp salt
2 tsp garlic powder
1 tbs lemon zest (so, for winter stock use, I have these packets of Pure Lemon and use 4 packets)

Sauce:
1 tsp garlic powder
1 tbs lemon juice (again, winter stock use, the bottled stuff is fine)
1/4 tsp salt
1/4 cup butter OR ghee, melted
Celery sticks, carrot sticks, sliced peppers ranch dressing for option sides

Preheat that oven to 450 degrees. Line your baking sheet with good foil and top that with your wire rack.

Pat the wings dry (tip: I put mine on a tray in fridge for about 30 minutes or so to dry out – the dryer they are to start, the crispier they get!) then place in wings in large bowl.

Combine the cornstarch, 1/2 tsp salt, 2 tsp garlic powder and lemon stuff, stir to combine and dump on the wings in large bowl.

Toss wings well to evenly coat all.

Place the wings on the wire rack, spread them out so they have room to breathe / sweat.

Bake 30 minutes and then flip every last one.

Bake for another 25 to 30 minutes til crispy and cooked to your liking … I like mine well done and no slimy stuff inside!

In small dish, mix up the 1 tsp garlic powder, lemon juice, 1/4 tsp salt and butter/ghee.

Place wings in large bowl. Pour the butter sauce over top and toss to cover all the wings in that buttery goodness.

Serve up with those veggies and enjoy!
