Street Tacos

For YEARS, Taco Tuesday was a huge thing in our household, back when we had the kids and then even after they left!

There would be tacos with all the fixings and chips and salsa as well. And of course, always the margaritas. That would most likely be why friends would come over on Tuesdays … after all, who can turn down a good margarita in good faith? FYI … that margarita link is for the Ranch Water which is a super simple margarita per se to make.

I would always use the dry packet mixes because it was good enough and heck, I was working full time and ALL I wanted was some tacos and margaritas! For obvious reasons, mainly because tacos and margaritas are no fun alone, I stopped doing Taco Tuesdays. I would go back to Florida to visit and work, family and friends would take me to all my favorite Mexican places and I would relive my love of tacos and margaritas. Then back to NW Indiana I’d come and well, let’s face it Hoosiers, there just isn’t a good margarita to be found and to me, that is a requirement with tacos.

I kept trying though. Normally, I would end up with too many margaritas and not enough tacos. Not a good thing! And then suddenly, I had choices: Street or American style. Huh? I just wanted cheese, lettuce, onions, tomatoes and sour cream on the taco. A good margarita would have been nice too!

Fast forward a bit. About 18 months maybe. Sis shows up on the home front and lo and behold, she LOVES margaritas and tacos too! Thanks to her, we found some good taco places, but still a no go on the margaritas. That’s ok though! I now do Taco Tuesdays at home. Yeah, some days it’s Taco Thursday, or maybe Margarita Monday but you know what, it’s all good!

So, Street Tacos are pretty neat … they are smaller shells and you can eat them with one hand. They are not stuffed and overflowing and are totally satisfying. I like mine traditional: ground beef, cilantro, white onion and Queso Fresco cheese. I also prefer flour tortillas.

Sis on the other hand, she likes tomatoes, Queso Fresco cheese and THAT’S all…

Here’s how I’ve been making tacos!

1 pound ground beef (this is when you can use that really clean stuff, 90/10 or 92/8) … slowly knocking out that 40 pound gift!
1 tbs chili powder
1/2 tsp salt
3/4 tsp cumin
1/2 tsp oregano
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 cup tomato sauce
Street Taco shells (they are the small ones)
Queso Fresco or Cotija cheese, shredded or crumbled (I use a grater)
white onion, finely diced
chopped cilantro
Optional: chopped tomato, pico OR Salsa

Start cooking up the ground beef in a large skillet, chopping the meat up as you go (no one likes chunky beef in tacos, do they?). Once the meat is about 50% cooked, go ahead and add all your seasonings except the tomato sauce and stir well.

Allow beef to cook all the way and drain any excess fat if necessary.

Stir in the tomato sauce and allow to cook at a low simmer for about 5 minutes, stirring occasionally.

Let’s line up the tacos and get ready to eat! Heat those shells in the microwave, wrapped in a damp paper towel for about 15-20 seconds, tops.

Lay out the shells (or if you are lucky use your taco holder) and add your meat, top with onions, cilantro and cheese OR whatever you like! I was just looking at traditional street tacos.

Serve up and ENJOY!!

*the two of us never eat all the taco meat, so take my advice and toss the leftovers in a quart size freezer bag and freeze. This has come in handy so many times for a quick taco night or even nachos! I defrost the bag in a bowl of hot water and then heat up to eat.
