What We Ate!

How about a little accountability around here?

We went to Nashville for 5 days and 4 nights recently with some younger kids to celebrate a birthday.

Nashville is NOT a cheap place to visit, so to speak. I will say, it’s worth it to me but with another theme park party weekend coming up late May, I need to squeeze those pennies in my pocket a little tighterr!

First up would be the curb the eating out. We can do it, we know we can. Just last week I was asking Sissy if she wanted to hit up our favorite pizza place that we’ve not been to since football season. We were all ready to go and then I was like, wait! We have leftover pizza in the freezer and pretzel bites in the fridge AND (big AND) I have nice cold beer in the fridge.

So we opted to stay home. That is how the Pizza Hack post came about, by the way!

Back in the day, my money saving, strict budget, stay at home mom days, I would meal plan and prep … I enjoyed doing that as well, back then. Nowadays, we just sort of wing it as I’m famous for suggesting something and 5 hours later saying NEVER MIND, LET’S DO THIS INSTEAD! Which, of course, leads to quite a bit of food waste. That is never a good thing, no matter what stage of life you are in!

So let’s do this and see where we go with it! My intention (which sometimes are not always the best) is to share what we eat or make for dinner Thursday through Wednesday with pictures and links if available. This might also motivate me to start documenting and uploading recipes and pictures to share!

Here is our week in review (#1)

Thursday – The day started well with Salsa being made around 9am for the intended Street Tacos … then I made a batch of Mexican Rice AND a “few” Espresso Martinis as Sissy was tired and wanted to wake up … ended up with Mexican Bowls … street taco meat, Mexican rice and topped with salsa and cheese. Oh, and the espresso martinis!

Friday – Nachos. On a paper plate. We did quite a bit of yard work and outdoor cleaning and we were exhausted.

Saturday – Steak Bites on the Blackstone (filet from freezer). Also pulled out a nice piece of Coconut Cake from the freezer as well! Oh and let’s not forget about the wine

Sunday – Grilled Chicken Chop Chop Salad and used the Universal Balsamic Vinaigrette as the chicken marinade AND dressing. Drinks were vodka, lemonade and cranberry.

Monday – Pizza out … man, we worked hard today with weeding and mulching and was just exhausted. Monday is a special for the pizza place, you get one size up for the same price (so we ended with an extra large pizza for freezer stash!) *This is the place that I really wanted to go to last week*

Tuesday – Grilled hot dogs and AF Potato Wedges (recipe / process coming this weekend!)

Wednesday – Grilled chicken and sautéed green beans. No pictures but it did happen! Both were delicious and glad I stuck to that plan!
