I recently went to Colorado for a Celebration of Life of a good friend. Not quite the way I wanted to visit the Boulder area but glad I went!
The family had the event catered and one of the things they were passing around was the Chicken and Waffles on little picks.
They were a pleasant surprise.

Which is what led me to these, of course! Now, they are a quick go to for a last minute, fuss free dinner when neither of us wants to put forth a lot of effort for food!

Yup, I have a wide variety of picks. I mean, come on, I love to do crafty cocktails and love the dressing up with garnishes. Amazon has a really good selection!

These were stupid easy to make. The only issue I had was figuring out which chicken nuggets to use.
Bare Nuggets was a no go. They just didn’t fit right on the waffle and felt dried out when I served the first round

Purdue, Panko coated nuggets were the winner. They had a nice uniform size and fit nicely on the waffle. They also stayed moist when served. Even better? Costco sells these for way less money than the average grocery store!
Now let’s talk about the waffles.
My first intention was to just make them from scratch on the tiny waffle maker I have. Uhm, yeah, I didn’t want this to be labor intensive so opted to do a quick Instacart delivery instead.
My poor eyesight ended up being a good thing when they delivered the waffles. I had clicked the Cinnamon Toast Mini Waffles instead of regular ones. Those have a nice underlying sweet and cinnamon taste that may become a freezer staple from now on!

Ok, let’s get cooking!
Syrup, room temperature or gently warmed
Mini waffles, toasted and lightly buttered. You will need to break these apart so you have little squares or circles that roughly match the size of your nuggets
Chicken nuggets, cooked and matched to the size of your mini waffles.
Short skewers or picks
*this was the most difficult part of all!*
Stab your nugget and then thread on the waffle.
Lay these out on your serving tray or plates.
Lightly drizzle with syrup. To make things easy, I used the regular Log Cabin Syrup we had in the pantry as the real deal is in the fridge, cold and does not drizzle well.
Serve up with a napkin on the side as they will be a little sticky but so good!
