We did a little float trip back in August with about 35 other strangers. I mean, yes, we signed up and committed to getting on a bus at 8:30am on a Saturday morning and spending 8 plus hours with these complete strangers.
It was fun. Like lots of fun. And we met some fun, interesting people in the process!
However, it was a long day and even though not that much alcohol was consumed by the two of us, we were exhausted and sunburned the next day so it was a lay low kind of Sunday. No worries, we got things to keep us entertained around here!
10:30am, breakfast had been made, consumed and cleaned up and the cork was popped for the weekly Mimosa Sunday tradition!
Which always leads me to ask, what shall we do for dinner tonight? Yes, it’s early, I get it but IF I need to take something out of the freezer, NOW would be the time, right?
Easy peasy
Grabbed the Mediterranean-Style Chicken Skewers (Costco) and a bag of Japanese Style Fried Rice (Trader Joe’s) and dinner was decided!
I am known to make a little bit of a deal when I cook as I like to cook and make things special, BUT days like that Sunday, I love having choices in the freezer to throw something together quickly …


Yup, those are the 2 items that made up the meal!
I added a bit of teriyaki sauce I had in the refrigerator and was happy to call it dinner!
TIP: Those chicken skewers have about 7-9 skewers per compartment … I generally remove them from the package and place in freezer ziploc bags and just grab what’s needed when it’s time to cook!
