Quick, Easy, and Somewhat Healthy Dinner

Not too long ago, there were quite a few road trips in the 4 week span of that month. I had just gotten back from a week trip and Sissy was coming home that night as well. We were both gone for over a week.

We both did road trips which are a different kind of exhausting.

I got home that Monday night at 9:30pm. A drive from hell that day … 7 hours took 11. That was just too long.

So first thing I did Tuesday morning was schedule a couple of Instacart deliveries (Costco and Meiers) as I needed to be home for a few UPS and USPS deliveries (that shoe biz stuff).

Honestly, I know the product prices are marked up but I swear that I save money by not getting sucked in by all the pretty and tasty things!

Then I had to work Tuesday and Wednesday, do laundry, pick up the yard a bit and so on. Before I knew it, 5pm rolls around!

Dinner!

Starving!

Ugh. I had a rough meal plan drafted but was still tired AND time got away.

Chicken nuggets (freezer, always have)

Air fryer

Veggies (carrots, celery and cucumbers, all from that Costco delivery)

Annnnnd… caprese salad. Fresh basil from the garden. Tomatoes and cheese from above mentioned Costco delivery.

Don’t knock those simple quick meals…I could have easily waited for Sis and suggested we go grab something but nah … we’ve been trying to save money and just be more conscious on that eating out stuff!
