Ready for a real quick and easy side dish for those Asian Fusion nights?

If you cook Asian or Chinese style foods occasionally, you most likely have the ingredients on hand!
I have quite a few recipes that I need to shoot and document to share in the upcoming weeks!

Let’s do this!
2 cucumbers (I use the seedless ones)
1/3 cup rice vinegar
1/2 tsp dark sesame oil (this generally means it’s toasted)
2 tbs white sugar
1/4 tsp or so of crushed red pepper flakes
1/2 tsp salt
3 green onions, sliced
1/4 cup or so of dry roasted peanuts, chopped
In a small mixing bowl or glass, mix together the vinegar, oil, sugar, red pepper flakes and salt. Set that aside.
Grab the cucumbers and peel (I like to peel leaving a thin green stripe for visual appeal) and slice thin.
Toss the cucumbers in a large glass or non-metallic bowl and pour the liquid mixture over top, toss to cover all and sprinkle with peanuts and green onions.
You can either serve up immediately OR cover and put in fridge for an hour or so.
Serve up with whatever Asian Fusion meal you are having and ENJOY!
