Balsamic Marinated Tomatoes

We went to a local Italian café a few weeks back and had this delicious tomato salad that they called “Insalata Salad” … sounded fancy but delicious so we coughed up the $16 and ordered it. Yeah, it WAS an appetizer and it was pretty damn good.

Then I said, wait! I knew I had a similar recipe in my little recipe archives to try at a later date and lo and behold, I found it! If you could see my recipe binder, you would be just as surprised!

The tomatoes and cheese balls came from Costco. Honestly, it’s the only store I ever want to shop at for the most part. I’m sad that winter is here and now I will have to time that 45 minute drive one way to shop …

Ok, let’s get chopping and make some deliciousness!

1/4 cup olive oil
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
Dash if salt
Dash of black pepper
Pint of the best cherry tomatoes you can find
3 balls of burrata cheese
Handful of fresh basil leaves

Mix the oil vinegar sale and pepper together set aside

Cut tomatoes in half and place in large shallow bowl

Cut burrata in half and then quarter to bite size pieces and add to tomatoes

Roll up those basil leaves and slice, turn those 1/4 turn and rough chop. Add those to tomatoes and cheese.

Whisk up the dressing again and gently drizzle over the tomato mixture.

Quick! Snap a pic and then leave it alone for 5 or so minutes

Dish up and serve alone with fork/spoon or grab some warm thick crust bread and dish on plate with same

Either way, delicious!
